Asma Khan's family is Mughal on one side and Kolkata on the other, and the menu holds both. The kitchen has been staffed by women throughout, most of them home cooks before they came, and the cooking is domestic in the best sense of the word - the methi chicken, fenugreek and all, is the dish that makes the case. Khan is usually somewhere in the room.
