Down an alley off Bow Lane, three bars on one site holding more than a thousand bottles between them. The collection was built on the mercantile history of gin and rum - where the spirit came from and who moved it - and then fused with about six hundred whiskies chosen on how they are made. The staff are the kind who will take you through it rather than leave you with a list.
It is a seating-only room, so walk-ins are welcome but a table is the safer plan, and the smallest of the three bars, the Brig, is bookable on its own as a private room. They also run masterclasses in each of the three spirits.
