This end of Drury Lane is working Covent Garden rather than the piazza - stage doors, rehearsal rooms and the people who staff them - and a coffee bar here serves a different crowd at ten in the morning than at four.
Redemption began as the first coffee roastery inside a prison and still trains there, running a barista academy for people leaving; a good part of the staff across their rooms came through it. The coffee has to stand on its own for the model to work, and it does - seasonal single origins, properly pulled.
