Lincoln's Inn Fields is the largest public square in London and one of the quietest, hedged in by the Inn on one side and the Royal College of Surgeons on another, and at lunchtime it fills with people from the chambers around it.
Redemption began as the first coffee roastery inside a prison and still trains there, running a barista academy for people leaving; a good part of the staff across their rooms came through it. The coffee has to stand on its own for the model to work, and it does - seasonal single origins, properly pulled.
