Andrew Wong took over his parents' restaurant in 2012 and turned it into something they would not recognise: a kitchen that treats the regional cooking of China as a subject to be studied, with a research arm attached and menus that say where a dish comes from. Lunch is dim sum, several of them taken apart and rebuilt. Dinner is a set menu that travels the provinces.
