Clare Smyth spent years running Gordon Ramsay's Chelsea kitchen before opening her own in August 2017, on a Notting Hill side street; it took three Michelin stars in the 2021 guide and holds five AA rosettes, and she is the first British woman to have held three. The cooking is built on British produce and on making very ordinary things extraordinary - the dish everyone cites is a potato, slow-cooked and dressed with roe. The room is a deliberate exercise in British craft, down to the bone china and the staff's suits.
