La palombe is the wood pigeon, and the owner's shooting runs right through the room - lithographs of wild birds on the walls, antlers overhead - so there is game on the menu whenever the season allows it. The cooking underneath is classical French and unhurried about it, down to a confit duck leg; the pastel decor is the only modern thing here.
