Hartnett's Italian side sets the menu and British produce fills it - Dorset crab, Herdwick lamb - with pasta such as agnolotti built around pappa al pomodoro, the Tuscan soup of bread and tomato. The Amalfi lemon tart has been on the pudding list since the beginning and has never come off it.
