Pasta alla norma - aubergine, tomato, ricotta salata - is where the name comes from, and it is on the primi list. The rest follows Sicily and the Moorish cooking that shaped it, which is why the tiles are Moroccan. Portions are large, the fritto misto especially, and the cannoli at the end are bigger than they strictly need to be.
