Leche de tigre is the citrus cure left in the bowl after a ceviche, and Lima serves stone bass sitting in it. Beyond that the menu moves between the Peruvian canon, including beef anticucho off the skewer, and dishes that have wandered a good way further. The colour on the plate is the first thing anybody remarks on.
