The chef built an audience doing cooking demonstrations online during lockdown and then opened somewhere those people could actually eat. The cooking is modern British with Italy behind it and nothing fussy about it - begin with a flatbread, and the sweetbreads are reliably the right order. The wine is low-intervention throughout.
