Jens Knoop opened the first of these in Rye and built the whole thing on one idea: you pick the chocolate by percentage. The menu runs from a 28 per cent white through the milks into dark at 70, 80 and on to a 100 per cent with nothing added at all, and whichever you choose is melted to order into the milk you ask for. This one has the Pod, a seating area downstairs, and opens from half past seven in the morning.
