Jens Knoop opened the first of these in Rye and built the whole thing on one idea: you pick the chocolate by percentage. The menu runs from a 28 per cent white through the milks into dark at 70, 80 and on to a 100 per cent with nothing added at all, and whichever you choose is melted to order into the milk you ask for. Cold whips and ice cream in summer. The shop is among the antique arcades at the Notting Hill end of the market.
