The name is the year Auguste Escoffier and Cesar Ritz opened the Savoy's restaurant and invented most of what a grand hotel kitchen still does. This is a small room off the main dining room, seating about ten, where the menu is drawn from Escoffier's own repertoire and brought forward into a modern kitchen.
