Two friends run Angelina and the whole menu rests on one idea: Italy and Japan handled as though they had always belonged together. A focaccia carries rosemary and nori; bream crudo arrives with blood orange, Sicilian pesto, umeboshi and anchovy. It is served kondate style, the Japanese way of composing a meal as a set of dishes that balance each other.
