Chantelle Nicholson runs Apricity on the principle that where a thing came from is part of the dish, so the menu names the farm and the press - Flourish Farm aubergines, Citizens of Soil oil. The wine comes from growers who work on their soil, and the cocktails are built out of the kitchen's own peelings and trimmings. The room is bare plaster and wood.
