Rice is the whole premise - a long run of Valencian paellas, from pork knuckle to tofu with sea lettuce, cooked on wood-fired stoves in an open kitchen - though meat and fish come off the fire as well. Ask for the ground floor, where the stoves are in view; upstairs you only get the results.
