Gunpowder cooks family recipes from across the subcontinent, not one region's canon: Kashmiri lamb chops, Nagaland pork belly, Kerala beef pepper fry, a Chettinad duck oothappam. They come as small plates, three or four to a person. There are several Gunpowders now, and this unassuming one is where it began.
