The Compton Arms has stood since before most of Islington was built, and for some years now it has handed its kitchen to young chefs in turn. Jay Claus and Syrus Pickhaver have it at present, cooking retro British food with a straight face: half a roast chicken with chips and curry mayonnaise, ray wing tenders on a crumpet under hot golden syrup.
