The name is the method: whole animals come in and are broken down on site, from Aberdeen Angus to Sutton Hoo chicken. The bread arrives with beef dripping, which is the by-product doing its job, and the braised short rib is what most of the room ends up ordering. It is still a pub, and people drink in it.
