Spring occupies the New Wing of Somerset House, which the Inland Revenue had for years, and is as light as the name promises. Skye Gyngell founded it and the cooking has stayed hers in character: Italian-influenced, led by the ingredient, very little done to anything. The Scratch menu is built from what would otherwise be thrown out, down to a bread and butter pudding made with yesterday's sourdough.
