The meal opens with otsumami, the small dishes that go with a drink, and then turns to nigiri delivered one piece at a time - chutoro and otoro off the tuna, hamachi, scallop. It is a small room a long way from where London's sushi counters usually sit, and there is a sake pairing if you want one.
