Nothing is scooped from a tub here: the base is mixed and then frozen in front of you with liquid nitrogen, which is fast enough that the ice crystals stay tiny and the result comes out dense rather than airy. It began in Camden in 2010 and this is the Soho room.
The flavours are the other half of it - tonka bean, burnt butter caramel, coffee and olive oil, ceremonial matcha, strawberry shiso - and the sundaes go further: brûléed banoffee pie, matcha tiramisu, a marshmallow waffle cup. Vegan flavours and toppings are marked on the board.
