Claire Ptak cooked at Chez Panisse in Berkeley before opening this on a Hackney corner, and the Californian habit came with her: organic and seasonal first, sugar second, so the cakes taste of the fruit rather than the icing. Madagascan vanilla, cane molasses, whatever the month has.
She made the lemon and elderflower cake for Harry and Meghan's wedding in 2018, which is the thing everyone knows, but the reason to come is the everyday counter - the buttermilk cake, the brownies, the whole-fruit tarts - eaten at one of the few seats by the window.
