French patisserie technique applied to matcha, yuzu, black sesame and the rest: cheesecakes, soufflé sponges, mousses and rolled cakes, in a small pale room off St Martin's Lane. It is the sort of counter where the cake is the reason to sit down rather than something to have with the coffee.
They bake for other people too - Hare and Tortoise, MAIDO and KINTAN all take their cakes. Last orders a quarter of an hour before closing.
