Brooklands is named for the Surrey motor racing circuit, and the room takes that literally: a scale model of Concorde hangs from the ceiling and the glass runs floor to ceiling onto a terrace. Claude Bosi cooks British produce at two stars - Lake District lamb, Cornish squid - in a register far quieter than the room.
