A St James's kitchen that made its name on the parts nobody wanted.

Fallow works nose to tail and then some: the smoked cod's head under Sriracha is the dish that made it, and it began as a way of using what fishmongers throw out. The counter runs the length of the open kitchen, and there is a heated terrace for when the room is full, which it generally is. Corn ribs with a cocktail while you wait.
