Nikkei is what happened when Japanese immigrants started cooking in Peru, and Fan pushes it further out again - ceviche and tiradito beside nigiri, with the rest of Asia leaning in. The omakase is where the kitchen shows its hand. Sake and the South American cocktails do more work here than the wine list.
