Jeremy Chan and Ire Hassan-Odukale began in St James's and now cook in a hard, quiet room at 180 Strand. The kitchen builds its own spice-led cooking on British micro-seasonality: vegetables grown slowly for flavour, line-caught fish, aged native breeds. The result is not a national cuisine and is not trying to be one.
