The room is vast and deliberately old-fashioned - stateliness, glamour, none of the hotel's modernity - and the cooking is British and built on British produce: a long list of steaks, and dishes with more going on than they admit to, such as an Orkney scallop pie with prawn, nduja and a lobster sauce.
