Ekstedt built his name in Stockholm on cooking over wood, and this is the first time he has done it outside Sweden. Things go into the embers or over the flame - Scottish trout grilled on coals, duck smoked in hay - and what does not is pickled, fermented or cured, which is the other half of the Nordic method. There is a carte as well as the tasting menu.
