Raffles took the Old War Office on Whitehall and opened it as a hotel in 2023; this is the ground-floor dining room. Mauro Colagreco works from more than seventy varieties of British fruit and vegetables, and the menu prints the plant before the protein in every dish, which is a statement about order and not about diet.
