Ormer is in the basement of a Mayfair hotel and makes no attempt at a scene; the service is formal and unapologetic about being so. The set menus come in two lengths, each with pescatarian and vegetarian versions, and the chef's Moroccan background surfaces through them - pigeon with preserved lemon, and an English saffron pudding served with a nadorcott, which is a late clementine.
