Ramsay's own restaurant, on a quiet Chelsea street off the Embankment, and the longest-held three stars in Britain: awarded in 2001 and never lost, through a decade in which he was far better known for television than for cooking. It is a small room, about forty seats, and a set menu; the kitchen has been a training ground for much of the rest of this list, Clare Smyth among them.
