Sabor is three places in one building: a bar on the ground floor, a counter opposite it working the length of Spain with its own fishmonger behind, and El Asador upstairs for Galicia and Castile. The oven up there was built for one thing, Segovian suckling pig, and the milk-fed lamb sweetbreads with capers are the other reason to climb.
