You are met in the hotel lobby and taken upstairs to a room with nothing on the door. The counter is cut from a single piece of hinoki cypress, and the room around it is bamboo, ceramics and kumiko latticework. The omakase runs to about eighteen pieces with dishes set between them - steamed abalone, grilled Kobe beef - and while the rice comes from Yamagata, most of the fish is out of European water.
