One of the partners owns eleven hundred acres in Northamptonshire, which supplies the beef, the game and much of the vegetables, and most of the seafood comes off a private Scottish island. That is an unusual amount of control over a menu. Four floors, a ground-floor dining room or a counter upstairs looking into the kitchen, and a Sri Lankan thread running quietly through the cooking.
