Er runs Yeni Lokanta in Istanbul and has brought the method here: traditional Turkish technique with an open fire underneath most of it. Grilled beef kofte comes with truffle butter, and there is a different cut of lamb over the wood every day. You can take it as a carte, a tasting menu, or a set feast for the table.
