The merveilleux is the thing: two discs of meringue sandwiched with whipped cream, rolled in shaved chocolate and left to soften for a day, which is a speciality of Lille rather than Paris and still rare here. Beside them are cramiques — an enriched brioche shot through with raisins or pearl sugar — and thick waffles filled to order. Everything is made on the premises. The counter here is open to the workroom, so the assembling and coating happens in front of you through the day. There are tables, which on that concourse is worth knowing.
