Badiani's stall in the old paper factory that Mercato Metropolitano fills, which means you can eat it sitting among everyone else's dinner rather than on the pavement. The firm has made gelato in Florence since 1932; Buontalenti, the cream and egg-yolk one, is named after the Medici engineer credited with the original.
