Jens Knoop opened the first of these in Rye and built the whole thing on one idea: you pick the chocolate by percentage. The menu runs from a 28 per cent white through the milks into dark at 70, 80 and on to a 100 per cent with nothing added at all, and whichever you choose is melted to order into the milk you ask for. Kensington High Street, a few minutes from Kensington Palace and the top of Hyde Park, and the earliest and latest of the London shops by some way.
