Cakes & patisserie
The house cake is the mille crêpe, and it is not baked at all: about twenty crêpes made paper-thin, each brushed with French pastry cream, stacked and chilled until the whole thing sets firm enough to cut in wedges. The name is borrowed from mille-feuille, a thousand leaves.
Celebration cakes are made to order in the same manner. Spring Street is the row of small hotels and cafés that runs off Sussex Gardens, a couple of minutes from the station and quieter than the Praed Street side of it.
