Marcolini won the world pastry championship in 1995 and then did something few Belgian chocolatiers do: he gave up ready-made couverture and began sourcing and roasting his own beans, so the bars taste of where the cocoa grew rather than of Belgium. Filled chocolates, ganaches, and a heart that has been copied everywhere.
