Amaya opened in 2005 where Knightsbridge meets Belgravia and was starred within a year, which at the time was not a thing that happened to Indian restaurants. The cooking comes off an open grill in full view - tandoor, sigri and tawa working at once - and arrives in small plates, a few at a time. A generation of London's Indian kitchens traces back to it.
