Hidden on St Anne's Court off Dean Street, Aulis is where Simon Rogan's team works out what the rest of the group will cook. A handful of people sit at a counter, each dish is made in front of them and explained as it goes, and what is being tested is part of the point. It took its first star in the 2024 guide.
