Santiago Lastra's rule is that nothing is imported: the cooking is Mexican and the ingredients are British, so the chillies are grown here and the lime is replaced by whatever does the same job. The signature is a langoustine taco with smoked chilli and sea buckthorn. There is a mezcaleria downstairs where the last part of the menu is served.
