Franco's has been going long enough that much of the room is people who order the same thing every time, and the kitchen is set up to let them: a long menu of classics, a veal and beef lasagne, linguine with lobster, none of it complicated by anybody. Everything on the wine list is Italian, and there are serious barolos among it.
