David Moore has run Pied a Terre on Charlotte Street through a turnover of neighbours few London streets can match, and has kept it there by changing it - a new room, and then a full vegan menu taken as seriously as the other one. The cooking itself is classical and seasonal: Welsh lamb with basil, anchovy and girolles.
